Cuisine : Adobo - How to prepare this popular Filipino dish

 



Adobo is a popular Filipino dish made with meat (usually chicken or pork) marinated and cooked in vinegar, soy sauce, garlic, bay leaves, and black peppercorns. Here's a basic recipe:


Ingredients:

- 1 kg of chicken or pork, cut into serving pieces

- 1/2 cup soy sauce

- 1/2 cup vinegar (preferably cane vinegar)

- 1 head of garlic, minced

- 1 onion, chopped

- 2-3 bay leaves

- 1 teaspoon whole black peppercorns

- 1 tablespoon cooking oil

- 1 cup water

- Salt and pepper to taste


Instructions:

1. In a bowl, combine the soy sauce, vinegar, minced garlic, chopped onion, bay leaves, and black peppercorns. Marinate the meat in this mixture for at least 30 minutes, preferably longer for better flavor.


2. Heat oil in a pan over medium heat. Remove the meat from the marinade, reserving the marinade for later use. Sauté the meat until browned on all sides.


3. Pour in the reserved marinade and water. Bring to a boil, then reduce the heat to simmer. Cover and cook until the meat is tender, stirring occasionally, for about 30-40 minutes.


4. Once the meat is tender, you can remove the lid and let the sauce reduce until thickened. Adjust seasoning with salt and pepper to taste.


5. Serve hot with rice. Adobo is often served with its sauce poured over the rice.
