**Ingredients:**

- 1 can (340g) corned beef

- 1 small pumpkin or butternut squash, peeled and cubed

- 1 onion, finely chopped

- 3 cloves garlic, minced

- 2 tomatoes, diced

- 2 tablespoons cooking oil

- 1 teaspoon turmeric powder

- Salt and pepper to taste

- Water or broth, as needed

- Fresh cilantro or parsley for garnish (optional)


**Instructions:**


1. **Prepare the Ingredients:**

   - Peel and cube the pumpkin or butternut squash.

   - Finely chop the onion and dice the tomatoes.

   - Mince the garlic cloves.


2. **Cooking:**

   - Heat the cooking oil in a large skillet or pot over medium heat.

   - Add the chopped onion and minced garlic to the skillet. Sauté until they are soft and fragrant, about 2-3 minutes.

   - Stir in the diced tomatoes and cook for another 2-3 minutes until they begin to soften.

   - Add the turmeric powder to the skillet and stir to combine, allowing the spices to toast for about 1 minute.

   - Add the cubed pumpkin or squash to the skillet and stir well to coat it with the spices.

   - Pour in enough water or broth to partially cover the pumpkin. Bring the mixture to a simmer and let it cook until the pumpkin is tender, about 15-20 minutes, stirring occasionally.

   - Once the pumpkin is tender, add the corned beef to the skillet. Break it up with a spoon and mix it well with the pumpkin mixture. Cook for another 5-7 minutes, allowing the flavors to meld together.

   - If the mixture seems too dry, you can add a little more water or broth to achieve your desired consistency.

   - Season the dish with salt and pepper to taste.


3. **Serve:**

   - Once everything is heated through and well combined, remove the skillet from the heat.

   - Transfer the Batar Da'an to a serving dish.

   - Garnish with fresh cilantro or parsley, if desired.

   - Serve hot as a main dish, accompanied by rice or bread.
