Char Kway Teow is a popular stir-fried noodle dish from Southeast Asia, particularly Malaysia and Singapore. Here's a recipe to prepare this flavorful dish at home:


 Ingredients

- 500g flat rice noodles (kway teow)

- 200g shrimp, peeled and deveined

- 200g Chinese sausage (lap cheong), thinly sliced

- 200g bean sprouts

- 4-5 cloves garlic, minced

- 2 eggs

- 4-5 tablespoons oil (vegetable or peanut oil)

- 2-3 tablespoons light soy sauce

- 1 tablespoon dark soy sauce

- 1 tablespoon oyster sauce

- 1 tablespoon chili paste (optional, to taste)

- 1 tablespoon fish sauce

- A handful of Chinese chives, cut into 3-inch lengths

- Salt and white pepper to taste


 Instructions


1. **Prepare Ingredients**:

   - If using fresh rice noodles, separate them gently. If using dried noodles, soak them in hot water until they soften, then drain and set aside.

   - Mix the light soy sauce, dark soy sauce, oyster sauce, and fish sauce in a small bowl.


2. **Cook Eggs**:

   - Heat 1 tablespoon of oil in a wok or large frying pan over medium-high heat.

   - Crack the eggs into the pan and scramble them. Once cooked, remove and set aside.


3. **Stir-Fry Ingredients**:

   - Add another 2 tablespoons of oil to the wok.

   - Add the minced garlic and stir-fry until fragrant, about 30 seconds.

   - Add the shrimp and Chinese sausage. Stir-fry until the shrimp turns pink and the sausage is slightly crispy.


4. **Add Noodles and Sauces**:

   - Add the rice noodles to the wok, followed by the sauce mixture. Stir-fry everything together, making sure the noodles are well-coated with the sauce.


5. **Combine All Ingredients**:

   - Add the bean sprouts and Chinese chives. Stir-fry for another 2-3 minutes until the vegetables are slightly tender but still crunchy.

   - Return the scrambled eggs to the wok and mix everything together.


6. **Season and Serve**:

   - Taste and adjust the seasoning with salt and white pepper as needed.

   - If you like it spicy, add the chili paste to your taste.

   - Serve hot, garnished with additional chives if desired.


### Tips

- **Wok Hei**: To achieve the authentic "wok hei" (breath of the wok) flavor, use a very hot wok and stir-fry quickly over high heat.

- **Variations**: You can also add other proteins like chicken or tofu, and adjust the vegetables based on your preference.
