**Ingredients:**

- 500g ground pork

- 3-4 stalks of lemongrass, finely chopped

- 4 cloves of garlic, minced

- 2 shallots, finely chopped

- 1-inch piece of galangal, finely chopped

- 1/4 cup cilantro, finely chopped

- 3-4 kaffir lime leaves, thinly sliced

- 2 tablespoons fish sauce

- 1 tablespoon chili powder (adjust to taste)

- 1 teaspoon turmeric powder

- 1 teaspoon ground coriander

- 1/2 teaspoon cumin

- 1/2 teaspoon black pepper

- Sausage casings (natural or synthetic)

- Vegetable oil (for frying or grilling)


**Instructions:**


1. **Prepare the Ingredients:**

   - Finely chop the lemongrass, garlic, shallots, and galangal.

   - Remove the stems from the cilantro and chop it finely.

   - Slice the kaffir lime leaves thinly.


2. **Mixing:**

   - In a large bowl, combine the ground pork with all the chopped ingredients.

   - Add fish sauce, chili powder, turmeric powder, ground coriander, cumin, and black pepper.
