Cuisine : Hainanese Chicken Rice - How to prepare this Singaporean dish

 



Hainanese Chicken Rice is a flavorful dish that consists of poached chicken and seasoned rice, commonly served with chili sauce and cucumber slices. Here's a detailed recipe:


Ingredients:

- 1 whole chicken (about 3-4 lbs)

- 2 cups jasmine rice

- 4 cups chicken broth (homemade or store-bought)

- 4 slices ginger

- 4 cloves garlic, smashed

- 2 stalks green onions, cut into 2-inch pieces

- Salt

- Soy sauce

- Sesame oil

- Cucumber slices, for garnish


For the sauce:

- 2 cloves garlic, minced

- 2 red chilies, minced

- 2 tablespoons ginger, minced

- 2 tablespoons soy sauce

- 2 tablespoons sesame oil

- 2 tablespoons chicken broth

- 2 tablespoons lime juice

- Salt and sugar to taste


Instructions:


1. Rinse the rice under cold water until the water runs clear. Drain and set aside.

2. In a large pot, bring the chicken broth to a boil. Add the ginger slices, smashed garlic cloves, and green onions.

3. Gently place the whole chicken into the pot, breast side down. Make sure the chicken is fully submerged in the broth. 

4. Bring the broth back to a boil, then reduce the heat to low and cover the pot. Let the chicken simmer for about 30-40 minutes, or until it is cooked through.

5. While the chicken is cooking, prepare an ice bath in a large bowl.

6. Once the chicken is cooked, carefully remove it from the pot and immediately plunge it into the ice bath to stop the cooking process. Let it cool completely.

7. In a separate pot, heat some oil over medium heat. Add the minced garlic, ginger, and red chilies. Cook until fragrant.

8. Add the cooked rice to the pot and stir to coat it with the aromatics.

9. Add 4 cups of the strained chicken broth to the rice. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked through.

10. While the rice is cooking, prepare the dipping sauce by combining all the sauce ingredients in a bowl. Adjust seasoning to taste.

11. Once the chicken has cooled, remove it from the ice bath and pat it dry with paper towels. Rub the skin with salt and a little sesame oil.

12. Chop the chicken into serving pieces.

13. Serve the chicken with the rice, cucumber slices, and dipping sauce on the side.
