Laksa is a popular Southeast Asian noodle soup known for its rich and spicy flavors. Here's a detailed recipe to prepare it:


Ingredients:


For the laksa paste:

- 6-8 dried red chilies, soaked in hot water for 20 minutes

- 4 shallots, peeled

- 4 cloves garlic, peeled

- 2 stalks lemongrass, white part only, chopped

- 1-inch piece galangal or ginger, peeled and chopped

- 1 tablespoon shrimp paste (belacan)

- 1 tablespoon ground coriander

- 1 tablespoon ground turmeric

- 1 tablespoon ground chili powder (optional for extra heat)

- 2 tablespoons vegetable oil


For the laksa:

- 200g rice vermicelli noodles or thick rice noodles, soaked in hot water until softened

- 400ml coconut milk

- 4 cups chicken or vegetable broth

- 200g shrimp, peeled and deveined

- 200g chicken breast or thigh, thinly sliced

- 1 cup bean sprouts

- 2 hard-boiled eggs, halved

- Fresh cilantro leaves for garnish

- Lime wedges for serving

- Salt and sugar to taste


Instructions:


1. Prepare the laksa paste: Drain the soaked dried chilies and place them in a blender or food processor. Add shallots, garlic, lemongrass, galangal or ginger, shrimp paste, ground coriander, ground turmeric, and ground chili powder. Blend until a smooth paste forms.

2. Heat the vegetable oil in a large pot over medium heat. Add the laksa paste and cook for 5-7 minutes until fragrant.

3. Pour in the chicken or vegetable broth and bring to a simmer. Stir in the coconut milk and let the broth simmer gently for about 10-15 minutes.

4. While the broth is simmering, prepare the noodles according to package instructions. Drain and set aside.

5. Add the sliced chicken and shrimp to the laksa broth. Cook until the chicken is cooked through and the shrimp turns pink, about 3-5 minutes.

6. Season the laksa broth with salt and sugar to taste.

7. To serve, divide the cooked noodles among serving bowls. Ladle the laksa broth, chicken, and shrimp over the noodles.

8. Garnish with bean sprouts, halved hard-boiled eggs, and fresh cilantro leaves.

9. Serve hot with lime wedges on the side.
