Chilli Crab is a popular Singaporean seafood dish known for its spicy and savory sauce. Here's a detailed recipe to prepare it:
Ingredients:
For the crab:
- 2 large mud crabs (about 1-1.5 kg each), cleaned and chopped into pieces
- 2 tablespoons vegetable oil
- 1 tablespoon ginger, minced
- 1 tablespoon garlic, minced
- 2-3 red chilies, sliced
- 2 stalks lemongrass, bruised
- 1 cup chicken or seafood broth
- 2 tablespoons tomato paste
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- Salt to taste
- 1 egg, beaten (optional)
- Chopped cilantro or green onions for garnish
For the sauce:
- 4 tablespoons tomato ketchup
- 2 tablespoons chili sauce or sambal paste
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
Instructions:
1. In a large wok or deep skillet, heat the vegetable oil over medium heat. Add the minced ginger, garlic, and sliced chilies. Stir-fry for about 1 minute until fragrant.
2. Add the crab pieces to the wok and stir-fry for 2-3 minutes.
3. Pour in the chicken or seafood broth and add the lemongrass. Bring to a simmer and cover the wok. Let the crab cook for about 8-10 minutes until the shells turn red and the crab meat is cooked through.
4. While the crab is cooking, prepare the sauce by combining all the sauce ingredients in a bowl. Adjust the sweetness and spiciness according to your preference.
5. Once the crab is cooked, remove the lid and add the tomato paste, soy sauce, sugar, and salt to taste. Stir well to combine.
6. If using, pour the beaten egg over the crab and gently stir to incorporate it into the sauce. Cook for another 1-2 minutes until the sauce thickens slightly.
7. Remove the lemongrass stalks from the wok.
8. Transfer the crab and sauce to a serving dish. Garnish with chopped cilantro or green onions.
9. Serve hot with steamed rice or mantou (Chinese steamed buns) on the side.
