Hokkien Mee is a popular dish in Southeast Asia, particularly in Singapore and Malaysia. Here's a detailed recipe:


Ingredients:

- 300g Hokkien noodles (thick yellow noodles)

- 200g prawns, deveined and shells reserved

- 200g squid, cleaned and sliced into rings

- 100g pork belly, sliced thinly

- 2 cloves garlic, minced

- 2 cups chicken stock

- 2 cups water

- 2 eggs, beaten

- 2 cups bean sprouts

- 2 tablespoons soy sauce

- 2 tablespoons oyster sauce

- 2 tablespoons dark soy sauce

- 2 tablespoons vegetable oil

- Salt and pepper to taste

- Sambal chili paste (optional, for serving)

- Chopped spring onions and lime wedges for garnish


Instructions:


1. **Prepare the Ingredients:**

   - Soak the Hokkien noodles in hot water for about 5 minutes until softened, then drain and set aside.

   - In a small saucepan, simmer the prawn shells in the chicken stock and water for about 15 minutes to make a seafood broth. Strain and set aside.

   - Marinate the prawns, squid, and pork belly separately with a bit of soy sauce and pepper.


2. **Cooking:**

   - Heat vegetable oil in a large wok or pan over medium-high heat. Add minced garlic and stir-fry until fragrant.

   - Add the marinated pork belly slices and cook until browned.

   - Add the prawns and squid, stir-frying until they turn pink and opaque.

   - Push the ingredients to one side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until they are mostly cooked, then mix them with the other ingredients.


3. **Flavoring:**

   - Add the soaked Hokkien noodles to the wok, followed by soy sauce, oyster sauce, and dark soy sauce. Toss everything together until the noodles are evenly coated.

   - Pour in the seafood broth, stirring continuously. Allow the noodles to absorb the flavors of the broth.

   - Add bean sprouts and continue stir-frying for another minute or two until the bean sprouts are slightly wilted but still crunchy.


4. **Finishing Touches:**

   - Taste and adjust the seasoning with salt and pepper if needed.

   - Serve the Hokkien Mee hot, garnished with chopped spring onions and lime wedges. You can also serve it with sambal chili paste on the side for extra spice.
