Or lam is a traditional Laotian stew made with meat, vegetables, and herbs, simmered in a flavorful broth. Here's how to prepare it in detail:


Ingredients:

- 1 lb (450g) meat (chicken, pork, or beef), thinly sliced

- 2-3 cups mixed vegetables (such as eggplant, pumpkin, green beans, and cabbage), chopped

- 4-5 shallots, finely chopped

- 4-5 cloves garlic, minced

- 2-3 tablespoons fish sauce

- 1-2 tablespoons soy sauce

- 1 tablespoon fermented fish sauce (padaek), optional

- 2-3 cups water or broth

- 1 cup fresh herbs (cilantro, mint, and/or Thai basil), chopped

- Salt and pepper to taste


Instructions:

1. Heat a large pot or Dutch oven over medium heat. Add a bit of oil, then add the shallots and garlic. Cook until fragrant and translucent.

2. Add the sliced meat to the pot and cook until browned on all sides.

3. Stir in the mixed vegetables and cook for a few minutes until they start to soften.

4. Season with fish sauce, soy sauce, and fermented fish sauce (if using). Stir to combine.

5. Pour in the water or broth, making sure the meat and vegetables are submerged. Bring to a boil, then reduce the heat to low and let simmer for about 20-30 minutes, or until the meat is tender and the vegetables are cooked through.

6. Taste and adjust seasoning with salt and pepper as needed.

7. Just before serving, stir in the chopped fresh herbs.

8. Serve hot with steamed rice or sticky rice.
