Vigorón is a traditional Nicaraguan dish that's a delicious combination of yuca (cassava), chicharrón (fried pork belly), and a cabbage salad topped with a vinegar and chili pepper sauce. Here's how you can make Vigorón:


**Ingredients:**


**For the Yuca (Cassava):**


- 1-2 large yuca roots

- Water for boiling

- Salt


**For the Chicharrón:**


- 1 pound of pork belly or pork rinds

- Oil for frying


**For the Cabbage Salad:**


- 1 small head of cabbage, thinly sliced

- 2-3 tomatoes, diced

- 1 small red onion, thinly sliced

- Juice of 2-3 limes

- Salt and pepper to taste


**For the Sauce:**


- 1 cup of white vinegar

- 1-2 chili peppers (such as jalapeños or habaneros), finely chopped

- 2 cloves of garlic, minced

- Salt and pepper to taste


**Instructions:**


**For the Yuca (Cassava):**


1. Peel the yuca and cut it into chunks.


2. Place the yuca chunks in a large pot, cover them with water, and add salt.


3. Bring the water to a boil and cook the yuca until it's tender (usually 20-30 minutes).


4. Drain the yuca and set it aside.


**For the Chicharrón:**


1. Cut the pork belly into small pieces.


2. Heat the oil in a frying pan or deep fryer.


3. Fry the pork belly pieces until they are crispy and golden brown.


4. Remove the chicharrón from the oil and place it on paper towels to drain excess oil.


**For the Cabbage Salad:**


1. In a large bowl, combine the thinly sliced cabbage, diced tomatoes, and thinly sliced red onion.


2. Squeeze the lime juice over the vegetables and season with salt and pepper. Toss to combine.


**For the Sauce:**


1. In a small bowl, mix the white vinegar, finely chopped chili peppers, minced garlic, and season with salt and pepper. Adjust the spiciness to your liking.


**To Serve Vigorón:**


1. Place a portion of the boiled yuca on a plate.


2. Add a serving of chicharrón on top of the yuca.


3. Serve a generous portion of the cabbage salad alongside the yuca and chicharrón.


4. Drizzle the vinegar and chili pepper sauce over the dish according to your taste preferences. The sauce adds a tangy and spicy kick to the dish.
