### Ingredients:


- 1 whole chicken, cut into pieces

- 2 tablespoons Colombo spice blend (a mix of various spices including coriander, cumin, turmeric, and more)

- 1 onion, finely chopped

- 3 cloves of garlic, minced

- 1 tablespoon fresh thyme leaves

- 1 Scotch bonnet pepper, seeds removed and finely chopped (adjust for spice preference)

- 2 tablespoons vegetable oil

- 2 tablespoons tomato paste

- 1 cup coconut milk

- 1 cup chicken broth

- Salt and pepper to taste


### Steps:


1. **Marinate Chicken:**

   - Rub the chicken pieces with the Colombo spice blend. Allow them to marinate for at least 30 minutes.


2. **Sauté Aromatics:**

   - In a large pot, heat vegetable oil over medium heat. Sauté the chopped onion, minced garlic, thyme, and Scotch bonnet pepper until the onion is translucent.


3. **Brown Chicken:**

   - Add the marinated chicken pieces to the pot and brown them on all sides.


4. **Add Tomato Paste:**

   - Stir in the tomato paste and cook for a couple of minutes.


5. **Simmer:**

   - Pour in the coconut milk and chicken broth. Season with salt and pepper. Bring to a simmer.


6. **Cook Until Tender:**

   - Cover the pot and let the chicken simmer until it's cooked through and tender. This usually takes around 30-40 minutes.


7. **Adjust Seasoning:**

   - Taste and adjust the seasoning if necessary. You can add more Colombo spice, salt, or pepper according to your preference.


8. **Serve:**

   - Serve the Poulet Colombo over rice or with traditional side dishes like plantains or yams.
