Indio Viejo is a traditional Nicaraguan dish that's a flavorful and hearty stew made with shredded beef and corn dough, typically accompanied by vegetables and spices. Here's a basic recipe on how to prepare Indio Viejo:


**Ingredients:**


- 2 pounds of beef (you can use beef roast or flank steak)

- 1 onion, chopped

- 2 cloves of garlic, minced

- 2 tomatoes, diced

- 2 green bell peppers, diced

- 2 cups of corn masa (corn dough, which you can find in Latin American grocery stores)

- 1/4 cup of achiote oil (achiote seeds infused in oil)

- 3 cups of beef or vegetable broth

- 2 bay leaves

- Salt and pepper to taste

- Fresh cilantro for garnish


**Instructions:**


1. Start by cooking the beef: In a large pot, add the beef, onions, garlic, tomatoes, and green bell peppers. Season with salt and pepper. Cook until the beef is browned and the vegetables are soft.


2. While the beef is cooking, mix the corn masa with water to make a thick paste. It should be a similar consistency to thick pancake batter.


3. Once the beef is cooked, remove it from the pot and shred it into smaller pieces.


4. In the same pot, add the achiote oil and bay leaves. Sauté for a couple of minutes to release the flavors.


5. Return the shredded beef to the pot and mix everything together.


6. Gradually add the corn masa paste, stirring constantly to prevent lumps. The corn masa will thicken the stew.


7. Add the beef or vegetable broth, and continue to stir until the mixture is smooth and well combined.


8. Allow the stew to simmer for about 15-20 minutes, stirring occasionally. The Indio Viejo should thicken and develop a rich, hearty consistency.


9. Taste and adjust the seasoning with more salt and pepper, if needed.


10. Remove the bay leaves.


11. Serve the Indio Viejo hot, garnished with fresh cilantro.
