Cuisine : Ecuadorian empanadas & how its prepared


 

Ecuadorian empanadas, also known as "empanadas de viento," are a popular and delicious snack. Here's a basic recipe:


Ingredients:


**For the Dough:**

- 3 cups all-purpose flour

- 1 teaspoon salt

- 1 cup unsalted butter, cold and diced

- 1 egg

- 1/2 cup cold water


**For the Filling:**

- 2 cups queso fresco (fresh cheese), crumbled

- 1 cup diced onions

- 1/2 cup chopped fresh cilantro

- 2 teaspoons achiote powder (optional, for color)

- Salt and pepper to taste

- Oil for frying


Instructions:


1. In a large bowl, combine the flour and salt. Cut in the cold, diced butter until the mixture resembles coarse crumbs.


2. Beat the egg and add it to the flour mixture. Gradually add the cold water, mixing until the dough comes together. Knead the dough on a floured surface until smooth.


3. Cover the dough and let it rest in the refrigerator for at least 30 minutes.


4. In a separate bowl, mix together the crumbled queso fresco, diced onions, chopped cilantro, achiote powder (if using), salt, and pepper. This is your empanada filling.


5. Preheat oil in a deep fryer or a large, deep pan to 350°F (175°C).


6. Roll out the dough on a floured surface and cut it into rounds using a round cutter or a glass.


7. Place a spoonful of the filling in the center of each dough round. Fold the dough in half, sealing the edges by pressing with a fork.


8. Carefully place the empanadas in the hot oil and fry until golden brown on both sides.


9. Remove the empanadas and let them drain on paper towels.


10. Serve hot and enjoy your Ecuadorian empanadas!
