Quesillo is a popular Nicaraguan street food that consists of rolled-up tortillas filled with cheese, pickled onions, and sour cream. It's a simple yet delicious snack. Here's how you can make quesillo:


**Ingredients:**


- Fresh corn tortillas

- Soft, stringy white cheese (commonly queso fresco or queso de la capa)

- Sour cream

- Pickled onions (see recipe below)


**Instructions:**


**For the Pickled Onions:**


1. Thinly slice a red onion into rings or half-rings.

2. Place the onion slices in a bowl and cover them with vinegar (white or apple cider vinegar works well).

3. Add a pinch of salt and sugar to taste.

4. Let the onions sit in the vinegar mixture for at least 30 minutes to pickle. You can prepare them in advance and store them in the refrigerator.


**For the Quesillo:**


1. Warm the corn tortillas: You can do this by briefly heating them on a griddle or in a dry skillet. You want them to be warm and pliable.


2. Place a portion of the soft white cheese in the center of each tortilla. The amount of cheese can vary based on your preference.


3. Add a spoonful of sour cream on top of the cheese.


4. Finally, add a few slices of the pickled onions.


5. Roll up the tortilla, folding in the sides as you go, so the filling is contained within the tortilla.


6. You can serve quesillos as is, or you can wrap them in a piece of plastic or parchment paper to keep them together while you eat. They are often served in this convenient wrapper.
