Locro de papa is a traditional Ecuadorian potato soup. Here's a basic recipe:
Ingredients:
- 4 large potatoes, peeled and diced
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon ground cumin
- 1 teaspoon achiote powder (optional, for color)
- 4 cups vegetable or chicken broth
- 2 cups milk
- 1 cup queso fresco (fresh cheese), crumbled
- Salt and pepper to taste
- Avocado slices and chopped fresh cilantro for garnish
Instructions:
1. In a large pot, sauté the chopped onions and minced garlic in vegetable oil until softened.
2. Add the ground cumin and achiote powder (if using), stirring to combine.
3. Add the diced potatoes to the pot and continue cooking for a few minutes, allowing the flavors to meld.
4. Pour in the broth and bring the mixture to a boil. Reduce heat and simmer until the potatoes are tender.
5. Using a potato masher, partially mash some of the potatoes to thicken the soup.
6. Add the milk and continue simmering until the soup reaches your desired consistency.
7. Season with salt and pepper to taste.
8. Before serving, stir in the crumbled queso fresco, allowing it to melt into the soup.
9. Serve hot, garnished with avocado slices and chopped cilantro.
