Cuisine : Rellenitos - how to prepare this dessert
Rellenitos are a traditional Guatemalan dessert made from ripe plantains. Here's a basic recipe for making them:
Ingredients:
- Ripe plantains (about 4-5)
- Black beans (cooked and mashed)
- Sugar
- Ground cinnamon (optional)
- Vegetable oil for frying
Instructions:
1. Peel the ripe plantains and cut them into chunks.
2. Boil the plantain chunks in water until they are soft and tender. This usually takes about 15-20 minutes.
3. Drain the boiled plantains and mash them into a smooth consistency while they're still hot.
4. In a separate bowl, mix the mashed black beans with sugar and a pinch of ground cinnamon if desired. The amount of sugar depends on your taste preference, but it's typically sweetened to taste.
5. Take a small amount of the mashed plantains and flatten them in the palm of your hand.
6. Place a spoonful of the sweetened black bean mixture in the center of the flattened plantain and fold the edges of the plantain over to encase the filling, forming a small patty or ball.
7. Heat vegetable oil in a frying pan.
8. Fry the rellenitos in the hot oil until they are golden brown on all sides.
9. Remove them from the oil and place them on a paper towel to remove excess oil.
10. Serve the rellenitos while they are still warm. They can be enjoyed as a dessert or a snack.
