Cuisine - Sel Roti - steps to prepare this Nepali bread

 


Sel roti is a traditional Nepali homemade, sweet, ring-shaped rice bread/doughnut. Here's how it's prepared:


Ingredients:

- 2 cups rice flour

- 1/2 cup all-purpose flour

- 1 cup ripe mashed bananas

- 1 cup granulated sugar

- 1/2 teaspoon baking powder

- 1/2 teaspoon cardamom powder

- Pinch of salt

- Oil for frying


Instructions:

1. In a large mixing bowl, combine rice flour, all-purpose flour, mashed bananas, granulated sugar, baking powder, cardamom powder, and a pinch of salt.

2. Mix all the ingredients well to form a thick batter. If the batter is too thick, you can add a little water to adjust the consistency.

3. Cover the bowl with a clean cloth and let the batter ferment for at least 6-8 hours or overnight. Fermentation helps develop the flavor and texture of the sel roti.

4. After the fermentation period, heat oil in a deep frying pan or kadhai over medium heat.

5. Take a circular mold or use your hands to shape the sel roti. Traditionally, it's made by pouring the batter in a circular motion into the hot oil to form a ring shape.

6. Fry the sel roti in the hot oil until it turns golden brown and crispy on both sides.

7. Once cooked, remove the sel roti from the oil and drain excess oil on paper towels.

8. Repeat the process with the remaining batter, frying sel roti in batches.

9. Serve sel roti hot or at room temperature with tea or yogurt.


Sel roti is often made during festivals like Dashain and Tihar in Nepal and is enjoyed as a snack or breakfast item.
