Fihunu Mas is a popular Maldivian dish, also known as Grilled Fish. Here's a detailed preparation method:


Ingredients:

- Fresh fish fillets (commonly tuna or reef fish)

- Marinade (a mixture of grated coconut, chili, garlic, ginger, curry leaves, turmeric, salt, and lime juice)

- Banana leaves (for wrapping, optional)

- Skewers or grill basket


Instructions:

1. Clean the fish fillets thoroughly, removing any scales and bones. Pat them dry with paper towels.

2. Prepare the marinade by combining grated coconut, chopped chili, minced garlic, grated ginger, curry leaves, turmeric powder, salt, and lime juice in a bowl. Adjust the ingredients according to your taste preferences.

3. Rub the marinade generously onto both sides of the fish fillets, ensuring they are well coated. Let the fish marinate for at least 30 minutes to allow the flavors to infuse.

4. If using banana leaves, briefly pass them over an open flame to soften them and make them pliable.

5. Wrap each marinated fish fillet in a banana leaf, securing it with toothpicks or skewers to hold the package together. This step adds flavor and helps to keep the fish moist during grilling.

6. Preheat your grill to medium-high heat. If using skewers, thread the fish onto them; if using a grill basket, place the wrapped fish directly onto the grill.

7. Grill the fish for about 4-5 minutes on each side, or until they are cooked through and nicely charred on the outside. Cooking time may vary depending on the thickness of the fillets.

8. Carefully unwrap the fish from the banana leaves and serve hot with steamed rice, lime wedges, and any additional accompaniments of your choice, such as sambal or salad.
