Dhivehi Biscuit, also known as Bondi Biscuit, is a traditional Maldivian coconut biscuit. Here's how to prepare them in detail:


Ingredients:

- 2 cups all-purpose flour

- 1 cup grated coconut (fresh or desiccated)

- 1 cup sugar

- 1/2 cup unsalted butter, softened

- 1 teaspoon baking powder

- 1/4 teaspoon salt

- 1/4 cup milk

- 1 teaspoon vanilla extract (optional)


Instructions:

1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

2. In a mixing bowl, combine the softened butter and sugar. Cream them together until light and fluffy.

3. Add the grated coconut to the butter-sugar mixture and mix well.

4. In a separate bowl, sift together the all-purpose flour, baking powder, and salt.

5. Gradually add the dry ingredients to the butter-sugar-coconut mixture, alternating with the milk. Mix until a dough forms. If the dough is too dry, add a little more milk, a tablespoon at a time, until it comes together.

6. If using vanilla extract, add it to the dough and mix until well incorporated.

7. Take small portions of the dough and roll them into balls about the size of a walnut. Place them on the prepared baking sheet, spacing them slightly apart as they will spread while baking.

8. Use a fork to gently flatten each ball of dough, creating a crisscross pattern on top.

9. Bake the biscuits in the preheated oven for 15-20 minutes, or until they turn golden brown around the edges.

10. Once baked, remove the biscuits from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.


Once cooled, your Dhivehi Biscuits are ready to be enjoyed with a cup of tea or coffee. Store them in an airtight container to maintain freshness.
