Beverages: Kleicha- Steps to prepare this Iraqi pastry

 





Kleicha is a traditional Iraqi pastry typically enjoyed during special occasions and festive seasons. There are different variations, but I'll provide a recipe for Kleicha filled with dates.


**Ingredients:**


**For the Dough:**

- 4 cups all-purpose flour

- 1 cup unsalted butter, melted

- 1 cup warm milk

- 1/2 cup sugar

- 1 teaspoon yeast

- 1/2 teaspoon baking powder


**For the Date Filling:**

- 2 cups dates, pitted and chopped

- 1/4 cup unsalted butter

- 1 teaspoon ground cardamom

- 1/2 cup chopped nuts (optional)


**Instructions:**


1. **Prepare the Dough:**

   - In a small bowl, dissolve the yeast in warm milk and let it sit for a few minutes until it becomes frothy.

   - In a large mixing bowl, combine the flour, melted butter, sugar, and baking powder.

   - Add the yeast mixture to the flour mixture and knead until you have a soft, smooth dough.


2. **Prepare the Date Filling:**

   - In a saucepan, melt the butter, add chopped dates, and cook over low heat until the dates soften.

   - Stir in ground cardamom and chopped nuts (if using).

   - Allow the filling to cool.


3. **Assemble the Kleicha:**

   - Preheat your oven to 350°F (180°C).

   - Take a small portion of the dough and roll it into a ball. Flatten the ball into a circle on a floured surface.

   - Place a spoonful of the date filling in the center of the dough circle.

   - Fold the edges of the dough over the filling to create a crescent or cylindrical shape. Seal the edges well.


4. **Baking:**

   - Place the shaped Kleicha on a baking sheet lined with parchment paper.

   - Bake in the preheated oven for about 15-20 minutes or until they turn golden brown.


5. **Cool and Enjoy:**

   - Allow the Kleicha to cool on a wire rack.

   - Once cooled, store them in an airtight container.
