Kubba is a popular Middle Eastern dish made with ground meat, rice, and spices. There are various types of Kubba, and one common variety is Kubba Mosul, which features a bulgur wheat shell. Here's a basic recipe:


**Ingredients:**

- 1 cup fine bulgur wheat

- 1 cup ground meat (beef or lamb)

- 1/2 cup rice, soaked

- 1 onion, finely chopped

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- Salt and pepper to taste

- Olive oil for frying


**For the Filling:**

- Ground meat (beef or lamb)

- Chopped onions

- Pine nuts (optional)


**Instructions:**


1. **Prepare the Filling:**

   - Sauté chopped onions in olive oil until golden.

   - Add ground meat and cook until browned.

   - If using pine nuts, add them to the mixture and cook until lightly toasted. Set aside.


2. **Prepare the Kubba Shell:**

   - Rinse the bulgur wheat in cold water and drain.

   - In a bowl, mix bulgur, soaked rice, ground meat, chopped onion, cumin, coriander, salt, and pepper.

   - Use this mixture to form flat, round discs in the palm of your hand.


3. **Assemble Kubba:**

   - Place a spoonful of the prepared filling in the center of each disc.

   - Fold the edges of the disc over the filling to create a rounded shape, sealing the edges.


4. **Cooking:**

   - Heat olive oil in a pan over medium heat.

   - Fry the Kubba until golden brown on all sides.


5. **Serve:**

   - Drain excess oil on paper towels before serving.

   - Serve Kubba with yogurt or your favorite dipping sauce.
