 Kabsa is a traditional Saudi Arabian dish, follow these general steps in preparing the same:


Ingredients:

1. Chicken or meat (lamb, beef, or a combination)

2. Basmati rice

3. Onions

4. Tomatoes

5. Carrots

6. Bell peppers

7. Garlic

8. Tomato paste

9. Kabsa spice mix (coriander, cumin, cardamom, cloves, cinnamon, black lime, bay leaves)

10. Stock or water

11. Olive oil


Instructions:


1. **Prepare Ingredients:**

   - Chop onions, tomatoes, carrots, bell peppers, and garlic.

   - Cut the meat or chicken into pieces.


2. **Sauté Aromatics:**

   - In a large pot, heat olive oil and sauté chopped onions until golden.

   - Add minced garlic and sauté briefly.


3. **Brown Meat:**

   - Add the meat or chicken pieces to the pot and brown them on all sides.


4. **Add Vegetables:**

   - Add chopped tomatoes, carrots, and bell peppers to the pot. Sauté briefly.


5. **Spices and Tomato Paste:**

   - Stir in the Kabsa spice mix and tomato paste. Cook for a few minutes to enhance flavors.


6. **Rice and Stock:**

   - Add rinsed basmati rice to the pot and coat it in the spice mixture.

   - Pour in enough stock or water to cover the ingredients. Bring to a boil.


7. **Simmer:**

   - Reduce heat to low, cover the pot, and simmer until the rice is cooked and the meat is tender.


8. **Fluff Rice:**

   - Once cooked, fluff the rice with a fork to separate the grains.


9. **Serve:**

   - Arrange the rice and meat/vegetables on a platter.

   - Garnish with fresh herbs, such as cilantro or parsley.
