8 cups water

1 piece of ginger (about 2 inches), sliced

2 tbsp soy sauce

1 lb pork belly (for chashu), or other preferred protein

Soft-boiled eggs (ajitsuke tamago)

Green onions, chopped

Nori (seaweed sheets), sliced

Bamboo shoots, optional

Corn kernels, optional



2. Preparing the Broth

1. Boil the Bones: In a large pot, add the pork or chicken bones. Cover with cold water, bring to a boil, and allow it to cook for about 10 minutes. Drain the water and rinse the bones. This removes impurities, helping to create a clearer broth.

2. Simmer the Broth: In a clean pot, add the blanched bones and 8 cups of fresh water. Add the kombu, onion, garlic, and ginger. Bring to a boil, then lower the heat and let it simmer for 4-6 hours for a rich, flavorful broth.

3. Season the Broth: About an hour before serving, remove the kombu and add soy sauce and miso paste (if making miso ramen). Taste and adjust the seasoning as desired.


3. Cooking the Noodles


1. Boil Water: In a separate pot, bring water to a boil.


2. Cook Noodles: Add the ramen noodles and cook according to package instructions (usually 2-4 minutes for fresh noodles). Drain and set aside.


4. Preparing Toppings

Chashu (Braised Pork): For an authentic ramen topping, braise pork belly in soy sauce, mirin, sugar, and ginger for about 1-2 hours, until tender. Slice thinly for topping.


Soft-Boiled Eggs: Boil eggs for about 6 minutes, then cool them in ice water. Peel, then marinate in soy sauce and mirin for at least an hour.


Green Onions and Other Toppings: Prepare green onions, nori, bamboo shoots, and corn as desired.



5. Assembling the Ramen


1. Arrange the Noodles: Place the cooked noodles in a bowl.


2. Ladle the Broth: Pour the hot broth over the noodles.
