Cuisine: Masala Semolina Pancakes (Spiced Suji Pancakes) - How to make this Bengali Indian item
These savory semolina pancakes are a quick and satisfying snack or breakfast option, packed with spices, herbs, and vegetables. Crisp on the outside and soft inside, they bring together the goodness of semolina (suji), onions, curry spices, and fresh coriander. Simple to whip up and perfect when served hot with a dollop of butter, these pancakes pair wonderfully with chutney or a hot cup of tea.
Ingredients
- ½ cup semolina (suji)
- ½ cup all-purpose flour (maida)
- 5 tsp white oil
- 2–3 tbsp chopped onions
- 1 cube of butter
- ½ tsp curry powder
- ½ tsp cumin powder
- 1 tsp red chilli powder
- Salt and sugar to taste
- A small bunch of chopped fresh coriander
- 3 tbsp chopped spring onions
Method

In a bowl, mix 2 tsp of oil with semolina, flour, salt, sugar, curry powder, cumin powder, and red chilli powder. Add water gradually to make a thick pancake batter.

Heat the remaining oil in a non-stick pan.

Pour a ladleful of batter onto the hot pan and spread slightly into a pancake shape.

Sprinkle chopped onions, green chillies (optional), coriander, and spring onions on top.

Once the bottom is golden, flip the pancake and cook the other side until both sides are nicely browned.

Repeat with the remaining batter.

Top with a pat of butter and serve hot.
