Here's a detailed recipe for making honey chilli potatoes:


 Ingredients


#### For the Potatoes:

- 3 large potatoes

- 3 tablespoons cornflour

- 2 tablespoons all-purpose flour (maida)

- 1 teaspoon salt

- 1 teaspoon black pepper

- Oil for deep frying


#### For the Sauce:

- 1 tablespoon oil

- 1 tablespoon finely chopped garlic

- 1 tablespoon finely chopped ginger

- 2-3 green chillies, finely chopped

- 1 medium onion, sliced

- 1 medium capsicum, sliced

- 2 tablespoons soy sauce

- 1 tablespoon tomato ketchup

- 2 tablespoons honey

- 1 tablespoon vinegar

- 1 teaspoon red chilli powder (adjust to taste)

- Salt to taste

- 1 tablespoon cornflour mixed with 3 tablespoons water (slurry)


#### For Garnish:

- Sesame seeds

- Spring onions, chopped


Instructions


Preparing the Potatoes:

1. **Peeling and Cutting**: Peel the potatoes and cut them into thin finger-like strips.

2. **Soaking**: Soak the potato strips in water for about 30 minutes. This helps remove excess starch and makes them crispy.

3. **Boiling**: Boil the potato strips in water for 3-4 minutes until they are just tender. Do not overcook them.

4. **Draining**: Drain the potatoes and pat them dry with a kitchen towel.

5. **Coating**: In a mixing bowl, combine cornflour, all-purpose flour, salt, and black pepper. Add the potato strips and toss them until well-coated with the flour mixture.

6. **Frying**: Heat oil in a deep frying pan. Once the oil is hot, fry the coated potatoes in batches until they turn golden brown and crispy. Remove and place them on a paper towel to drain excess oil.


#### Preparing the Sauce:

1. **Heating Oil**: In a wok or large frying pan, heat 1 tablespoon of oil over medium heat.

2. **Sauteing Aromatics**: Add chopped garlic, ginger, and green chillies. Saute for a minute until fragrant.

3. **Adding Vegetables**: Add sliced onions and capsicum. Stir-fry for 2-3 minutes until they are slightly tender but still crisp.

4. **Adding Sauces**: Add soy sauce, tomato ketchup, honey, vinegar, red chilli powder, and salt. Stir well to combine.

5. **Thickening the Sauce**: Add the cornflour slurry to the wok and stir continuously until the sauce thickens.


#### Combining and Serving:

1. **Mixing Potatoes with Sauce**: Add the fried potato strips to the wok and toss them well to coat evenly with the sauce.

2. **Garnishing**: Sprinkle sesame seeds and chopped spring onions on top.

3. **Serving**: Serve hot as an appetizer or snack.
