Ingredients

For Chicken Marinade:
  • Boneless chicken breast – 450g
  • Black pepper – ½ tsp
  • Garlic paste – 1 tsp
  • Lemon juice – 1 tbsp
  • Green chili paste – ½ tsp
  • Honey – ½ tsp
  • Mixed herbs – 1 tsp
  • Salt – ½ tsp
For the Salad:
  • Chopped apple – 1 cup
  • Boiled and diced potato – 1 cup
  • Chopped onion – ½ cup
  • Sweet corn – ½ cup
  • Chopped lettuce – 1 cup
  • Mixed nuts – ½ cup
  • Orange segments – ½ cup
For the Salad Dressing:
  • Mayonnaise – ¾ cup
  • Strained yogurt – 2 tbsp
  • Mustard sauce – 1 tbsp
  • Lemon juice – 2 tbsp
  • Rock salt – ½ tsp
  • Black pepper – ½ tsp
  • Mixed herbs – 1 tsp
  • Chopped spring onions – ½ cup
  • Beetroot juice – 3 tbsp
For Grilling Chicken:
  • Butter – 4 tbsp
  • White oil – 2 tbsp

Method

  1. Prepare the Chicken: Wash and pat dry the chicken breasts. Make shallow cuts on the surface. Coat with all the marinade ingredients and let it rest for an hour.
  2. Grill the Chicken: Heat butter and oil in a non-stick grill pan. Grill the chicken until golden brown and fully cooked. Let it cool slightly before processing it in a mixer or food processor for a light shred.
  3. Prepare the Dressing: In a large bowl, whisk together mayonnaise, yogurt, mustard sauce, and beetroot juice until smooth.
  4. Assemble the Salad: Add all the salad ingredients to the dressing and mix well. Incorporate the shredded chicken into the mixture.
  5. Final Touch: Drizzle the remaining dressing ingredients over the salad and serve fresh.
