Milk Rice, or Kiribath, is a traditional Sri Lankan dish made with rice and coconut milk. It holds cultural significance and is often prepared for auspicious occasions, celebrations, and New Year festivals. The dish has a creamy texture and a mildly sweet, rich taste. Kiribath is typically served with accompaniments such as lunu miris (spicy onion sambol), jaggery, or curry.

How to Prepare Milk Rice (Kiribath)

Ingredients

  • 1 cup raw white rice (traditionally, white raw rice or red kekulu rice is used)
  • 2 ½ cups water (for cooking the rice)
  • 1 cup thick coconut milk
  • ½ teaspoon salt (or to taste)

Step-by-Step Preparation

1. Washing and Cooking the Rice

  1. Rinse the rice thoroughly under running water 2–3 times to remove excess starch.
  2. In a medium-sized pot, add the washed rice and 2 ½ cups of water.
  3. Place the pot on medium heat and bring the water to a boil.
  4. Once boiling, reduce the heat to low and let the rice cook until it becomes soft and absorbs most of the water. This usually takes about 15–20 minutes.

2. Adding Coconut Milk and Salt

  1. Once the rice is fully cooked and soft, add the thick coconut milk and salt.
  2. Stir well to combine and let the mixture simmer on low heat for another 5–7 minutes.
  3. Stir occasionally to prevent sticking and ensure even absorption of the coconut milk.
  4. The rice should become creamy and slightly sticky but not too runny.

3. Setting and Serving

  1. Once cooked, remove the pot from heat.
  2. Transfer the milk rice to a greased flat tray or plate and spread it evenly, pressing it down gently with a spoon or spatula.
  3. Allow it to cool slightly for about 10–15 minutes, so it firms up.
  4. Cut into diamond or square shapes before serving.

Serving Suggestions

  • Lunu Miris – A spicy onion and chili sambol is a classic accompaniment.
  • Jaggery or Honey – For a sweet version, serve with jaggery or drizzle with honey.
  • Chicken or Fish Curry – Some enjoy kiribath with a flavorful curry for a hearty meal.

Kiribath is simple to make yet rich in tradition, making it a special dish for festive moments and everyday comfort alike.
