Makai Chevdo is a popular Indian snack made from crispy cornflakes or fried corn poha, mixed with spices, nuts, and dried fruits. This crunchy and flavorful snack is a specialty in Gujarat and Maharashtra, often enjoyed during festivals or as a tea-time treat. It is light, mildly sweet, spicy, and packed with textures, making it a favorite among all age groups.
How to Prepare Makai Chevdo
Ingredients:
- 2 cups cornflakes (raw or ready-to-eat)
- ¼ cup peanuts
- ¼ cup cashews
- ¼ cup raisins
- 2 tablespoons dry coconut slices (optional)
- 2 tablespoons fried gram dal (dalia)
- 2 tablespoons oil or ghee
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon sesame seeds
- 6-8 curry leaves
- 2-3 green chilies, chopped
- 1 teaspoon turmeric powder
- ½ teaspoon red chili powder (adjust to taste)
- ½ teaspoon sugar
- Salt to taste
Steps to Prepare:
- Fry the Cornflakes (if using raw ones): Heat oil in a pan and fry the raw corn poha until they puff up and turn crisp. Drain on paper towels. If using ready-to-eat cornflakes, skip this step.
- Roast the Nuts: In the same pan, heat a little oil and roast peanuts, cashews, dry coconut slices, and fried gram dal until golden. Set aside.
- Prepare the Spice Mix: Heat 2 tablespoons of oil in a pan, add mustard seeds, cumin seeds, sesame seeds, and curry leaves. Once they splutter, add chopped green chilies.
- Add Spices: Lower the heat and add turmeric powder, red chili powder, sugar, and salt. Mix well.
- Combine Everything: Add the fried cornflakes and roasted nuts to the spice mixture. Toss well to coat everything evenly.
- Cool and Store: Let the Makai Chevdo cool completely before storing it in an airtight container.
