   - Salt to taste

   - 2-3 tablespoons palm oil or vegetable oil

   - Optional: vegetables like spinach or okra for added texture and flavour

   1. **Prepare the Base:**

      - In a large saucepan, heat the palm oil (or vegetable oil) over medium heat. Add the chopped onion and garlic, and sauté until the onions become soft and translucent.

      - If using tomato paste and ground chilli, add them to the pot, stirring to incorporate the flavours. Cook for an additional 2-3 minutes.


   2. **Cook the Cornmeal:**

      - In a separate bowl, mix the cornmeal with a little water to make a smooth paste, avoiding lumps.

      - Add the cornmeal paste to the saucepan with the onion mixture, stirring constantly to prevent lumps from forming.

      - Gradually add the rest of the water, stirring continuously until the mixture begins to thicken.


   3. **Simmer and Season:**

      - Reduce the heat to low and let the Nyekoe simmer for about 10-15 minutes, stirring occasionally to prevent burning.

      - Add salt to taste and adjust any other seasonings. If you are using vegetables like spinach or okra, stir them into the mixture and cook until they are tender.


   4. **Serve:**

      - Once the Nyekoe is thick and cooked through, remove it from the heat. It can be served on its own or paired with stews, soups, or grilled meats for a complete meal.
