Muamba de Galinha is a traditional Angolan dish, renowned for its rich, flavorful profile and cultural significance. The dish is made with chicken, palm oil (*dendê*), and okra, and is often served with rice or *funge*, a starchy side dish made from cassava or corn flour. Known for its vibrant red color and the distinct taste of palm oil, *Muamba de Galinha* is a staple in Angolan cuisine, reflecting the country’s rich culinary heritage influenced by African, Portuguese, and indigenous traditions.


How to Prepare Muamba de Galinha


**Ingredients**:

- 1 whole chicken (cut into pieces)

- 1 cup of palm oil (*dendê oil*)

- 1 onion (chopped)

- 3-4 garlic cloves (minced)

- 2 tomatoes (chopped)

- 1-2 red chilies (optional, for spice)

- 1 cup of okra (cut into chunks)

- 1 teaspoon of paprika

- Salt and pepper (to taste)

- Water (as needed)

- 2 bay leaves

- Pumpkin seeds (*ginguba* or groundnut paste) for additional flavor (optional)


**Preparation**:


1. **Marinate the Chicken**:

   - Season the chicken pieces with salt, pepper, paprika, and minced garlic.

   - Let the chicken marinate for about 30 minutes to an hour to absorb the flavors.


2. **Fry the Chicken**:

   - Heat the palm oil in a large pot over medium heat.

   - Add the marinated chicken pieces and fry them until they are browned on all sides. This gives the chicken a rich flavor and locks in moisture.

   

3. **Prepare the Sauce**:

   - In the same pot, add chopped onions, tomatoes, and bay leaves. Let them cook for 5-7 minutes until the onions are soft and the tomatoes have broken down into a sauce.

   - Add water (about 1-2 cups) to create a stew-like consistency. Stir well to combine the ingredients.

   

4. **Simmer and Cook**:

   - Add the okra to the pot and stir to mix it into the stew.

   - Lower the heat to medium-low, cover the pot, and let everything simmer for 30-40 minutes until the chicken is fully cooked, tender, and flavorful.


5. **Finish and Serve**:

   - Taste and adjust the seasoning as needed. If you like a thicker stew, you can add ground pumpkin seeds or groundnut paste for added richness.

   - Serve *Muamba de Galinha* hot, accompanied by rice or *funge*.
