 Ingredients

- **Bell peppers**: 1-2, chopped

- **Palm oil or vegetable oil**: 1/2 cup

 Preparation


1. **Prepare the Banana Leaves**: 

   - Rinse the banana leaves and pass them over an open flame or in hot water to soften them. This makes them more pliable for wrapping.


2. **Marinate the Protein**: 

   - In a bowl, combine your chosen protein (fish or chicken) with salt, pepper, garlic, ginger, and any other desired spices. Let it marinate for at least 30 minutes to allow the flavors to meld.


3. **Sauté the Vegetables**:

4. **Assemble the Liboke**: 

   - Lay a piece of banana leaf flat on a clean surface. Place a portion of the marinated protein in the center, topped with a spoonful of the sautéed vegetable mixture. Drizzle with a bit of palm oil for added flavor.


5. **Wrap the Liboke**: 

   - Fold the sides of the banana leaf over the filling, then roll it up tightly, ensuring it is sealed. Repeat this process for the remaining portions.


6. **Cook the Liboke**: 

   - You can cook the wrapped Liboke in several ways:

     - **Steaming**: Place the wrapped bundles in a steamer and steam for about 30-40 minutes.

     - **Grilling**: Place the bundles on a grill over medium heat, turning occasionally for about 30 minutes until cooked through.

     - **Baking**: Preheat the oven to 180°C (350°F). Place the wrapped Liboke on a baking tray and bake for 30-40 minutes.


7. **Check for Doneness**: 

   - If using chicken, ensure it reaches an internal temperature of 75°C (165°F). Fish should flake easily when done.


8. **Serve**: 

   - Carefully unwrap the Liboke, as steam will escape. Serve hot, garnished with fresh herbs, and alongside rice or plantains.
