Chili, a hint of white wine, and Bhetki fish – the perfect combination for a dinner item . If Hilsa is the king of fish, then Bhetki can surely be crowned the queen. With minimal bones, it's easier to eat and is packed with calcium and phosphorus, making it highly nutritious. Here’s a recipe for an authentic Chinese dish featuring Bhetki.

Ingredients

  • 200 grams Bhetki fish, deboned and cut into pieces
  • Oil
  • Chopped red, yellow, and green bell peppers
  • 25 grams red chili (sliced)
  • ½ tablespoon chopped garlic and ginger paste
  • 15 grams chopped celery leaves
  • A little cornstarch (mixed with water)
  • ½ tablespoon chili paste
  • ½ tablespoon tomato ketchup
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons white wine
  • 2 tablespoons white vinegar
  • ½ tablespoon white pepper powder
  • Chopped spring onions
  • 1 egg
  • Salt to taste
  • Chicken stock

Method

  1. Marinate the Fish:
    Marinate the fish pieces with egg, cornstarch, ginger-garlic paste, salt, and white pepper. Let it rest for 20 minutes. Fry the marinated fish until golden.

  2. Prepare the Gravy:
    In another pan, heat 2 tablespoons of oil. Add the chopped bell peppers and celery leaves and sauté briefly. Then, add chili paste, vinegar, tomato ketchup, and chicken stock. Stir well.

  3. Combine and Finish:
    Add the fried fish to the gravy and mix gently. Pour in the cornstarch slurry to thicken the sauce. Drizzle white wine over the dish and stir.

  4. Garnish and Serve:
    Sprinkle chopped spring onions on top and serve hot.
