Ingredients

  • ½ tsp salt

For Salad:

  • 1 cup chopped apple
  • 1 cup boiled and diced potatoes
  • ½ cup chopped onion
  • ½ cup sweet corn
  • 1 cup chopped lettuce leaves
  • ½ cup mixed nuts
  • ½ cup orange segments

For Salad Dressing:

  • ½ cup mayonnaise
  • 2 tbsp strained yogurt
  • 1 tbsp mustard sauce
  • 2 tbsp lemon juice
  • ½ tsp rock salt
  • ½ tsp black pepper powder
  • 1 tsp mixed herbs
  • 3 tbsp beet juice
  • ½ cup chopped spring onions

For Grilling the Chicken:

  • 4 tbsp butter
  • 2 tbsp white oil

Method

  1. Prepare the Chicken:

    • Wash the chicken breast and pat it dry.
    • Make shallow cuts on the surface of the chicken.
    • Marinate the chicken with all the ingredients listed under the marinade. Let it rest for 1 hour.
  2. Grill the Chicken:

    • Heat butter and white oil in a non-stick grill pan.
    • Grill the marinated chicken until fully cooked and golden on both sides. Set aside to cool slightly.
  3. Prepare the Salad Dressing:

    • In a large bowl, whisk together mayonnaise, yogurt, mustard sauce, and beet juice until smooth.
  4. Combine the Salad Ingredients:

    • Add the chopped apple, boiled potatoes, onion, sweet corn, lettuce, nuts, and orange segments to the dressing. Mix well.
  5. Shred the Chicken:

    • Lightly pulse the grilled chicken in a mixer grinder or food processor to shred it.
    • Mix the shredded chicken into the salad.
  6. Finish with Dressing:

    • Add the remaining dressing ingredients and toss the salad well.
