Cuisine : Cauliflower Mash Recipe - how to prepare this dish of Bengal

Ingredients:
- 500g cauliflower, cut into small pieces
- 4 dried red chilies
- 2 green chilies
- 10 garlic cloves
- 1 medium onion, finely chopped
- 1 tomato
- ½ cup chopped coriander leaves
- Salt to taste
- Oil as needed

Boil the Cauliflower:
- In a pan, boil water with a pinch of salt. Add the cauliflower pieces and cook until tender. Set aside.

Fry the Ingredients:
- Heat oil in a pan. Fry the dried red chilies first, then the garlic cloves. Remove them and set aside.
- Cut the tomato into small pieces and fry in the same oil until soft. Remove and then sauté the chopped onion until translucent. Set aside.

Mash the Ingredients:
- In a mixing bowl, mash the boiled cauliflower thoroughly.
- Separately, mash the fried chilies, garlic, tomato, and onion together with a pinch of salt until smooth.

- Mix the mashed cauliflower with the chili-garlic mixture. Add the chopped coriander leaves and a drizzle of mustard oil.
- Adjust salt as needed and mix well until evenly combined.
