Poutine is a beloved Canadian comfort food, originating from Quebec. It’s a simple yet indulgent dish made with crispy fries, fresh cheese curds, and rich brown gravy. Though it might sound basic, the magic lies in how these three elements come together — the crispy-salty fries, the squeaky, slightly melty cheese curds, and the savory gravy coating everything. It’s perfect as a late-night snack, a pub favorite, or even as a hearty side dish.


Ingredients:

  • French fries – 4 cups (homemade or frozen, cooked until crisp)
  • Cheese curds – 1½ cups (preferably white cheddar)
  • Butter – 2 tablespoons
  • All-purpose flour – 2 tablespoons
  • Beef or chicken stock – 2 cups (or a mix)
  • Black pepper – to taste
  • Salt – to taste

How to Prepare:

  1. Prepare the Gravy:
    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes, stirring constantly, to make a light roux. Gradually whisk in the stock, making sure there are no lumps. Let it simmer for 4–5 minutes, until it thickens into a smooth gravy. Season with salt and black pepper to taste.

  2. Prepare the Fries:
    While the gravy is simmering, cook the French fries (if not already done) until golden and crispy. You can deep-fry, bake, or air-fry them as you prefer.

  3. Assemble the Poutine:
    On a serving plate, pile up the hot fries. Scatter the cheese curds generously over the fries. Immediately pour the hot gravy over the top, ensuring the curds soften slightly but don’t fully melt.

  4. Serve and Enjoy:
    Serve the poutine hot, as soon as it’s assembled, so you get the perfect contrast of crispy fries, warm cheese curds, and velvety gravy.
