Cold Chicken Salad is a flavorful and refreshing dish, perfect for a light meal or appetizer. This salad combines minced chicken with aromatic herbs and a hint of spice, creating a delicious balance of taste and texture.
Ingredients:
- 250g minced chicken
- 1 onion, finely chopped
- 2 tablespoons white oil
- Salt to taste
- 2 tablespoons red curry paste
- 2 tablespoons fish sauce
- 1 bunch of coriander leaves
- Juice of 1 lemon
- 2 tablespoons chopped mint leaves
- Lettuce leaves, cucumber, and chopped tomatoes for garnish
Method:
Heat oil in a pan and sauté the chopped onion until golden. Add the minced chicken and red curry paste, stirring well. Season with salt and cook with a little water for about 10 minutes until the chicken is fully cooked and the mixture is dry. Remove from heat and let it cool.
