Gujiya Sandesh
Gujiya Sandesh is a fusion sweet that combines the flavors of traditional Gujiya with the soft, melt-in-the-mouth texture of Sandesh, a famous Bengali dessert. Instead of deep-frying, this variation uses chhena (paneer) to create a delicate, flavorful treat shaped like Gujiya and infused with cardamom and dry fruits. It is a perfect festive dessert that is both rich and healthier than the traditional deep-fried Gujiya.
Ingredients
For the Chhena (Paneer)
- 1 liter full-cream milk
- 2 tablespoons lemon juice or vinegar
- Cold water (for rinsing)
For the Sandesh Mixture
- ½ cup powdered sugar
- 1 teaspoon cardamom powder
- 2 tablespoons desiccated coconut
- ¼ cup chopped dry fruits (almonds, cashews, pistachios)
- 1 tablespoon raisins
- 1 teaspoon saffron strands (optional)
For Garnishing
- Silver leaf (varak) (optional)
- Chopped pistachios
How to Make Gujiya Sandesh
Step 1: Prepare the Chhena
- Boil the milk in a heavy-bottomed pan. Once it starts boiling, add lemon juice or vinegar and stir gently until the milk curdles.
- Strain using a muslin cloth and rinse under cold water to remove any sourness.
- Squeeze out excess water and let the chhena rest for 30 minutes.
Step 2: Make the Sandesh Mixture
- Knead the chhena until smooth and soft.
- Heat a pan on low flame and cook the chhena for a few minutes to remove excess moisture. Do not overcook.
- Remove from heat and mix in powdered sugar, cardamom powder, desiccated coconut, and chopped dry fruits.
Step 3: Shape the Gujiya Sandesh
- Take small portions of the mixture and roll into small discs.
- Place a little filling in the center, fold into a half-moon shape like Gujiya, and seal the edges gently.
- Press lightly to create traditional Gujiya impressions.
Step 4: Garnish and Serve
- Garnish with saffron strands, chopped pistachios, or silver leaf.
- Let it set in the refrigerator for 30 minutes before serving.
