Poornam Boorelu (also called "Boorelu" or "Poornalu") is a traditional South Indian sweet dish, especially popular in Andhra Pradesh and Telangana. It is commonly prepared during festivals like Ugadi, Varalakshmi Vratham, and Dussehra. These deep-fried dumplings are made with a crispy outer layer of rice and urad dal batter, filled with a sweet stuffing of chana dal, jaggery, and coconut.
Ingredients
For the Outer Batter:
- 1 cup raw rice
- ½ cup urad dal (black gram)
- A pinch of salt
- Water (as needed)
For the Filling (Poornam):
- 1 cup chana dal (Bengal gram)
- 1 cup grated jaggery
- ½ teaspoon cardamom powder
- 2 tablespoons grated coconut (optional)
For Frying:
- Oil (for deep frying)
How to Make Poornam Boorelu
Step 1: Prepare the Outer Batter
- Wash and soak rice and urad dal together in water for 4-5 hours.
- Drain the water and grind into a smooth, thick batter using minimal water.
- Add a pinch of salt and let it rest for 2-3 hours.
Step 2: Prepare the Filling (Poornam)
- Wash and cook chana dal in enough water until soft but not mushy. Drain excess water.
- Mash or blend the cooked dal into a coarse paste.
- Heat a pan, add mashed dal, jaggery, and grated coconut. Stir well until the mixture thickens.
- Add cardamom powder, mix, and allow it to cool.
- Once cooled, make small lemon-sized balls from the mixture.
Step 3: Assemble and Fry
- Heat oil in a deep pan over medium flame.
- Dip each sweet filling ball into the prepared rice-urad dal batter, ensuring it is well coated.
- Gently drop into the hot oil and deep-fry until golden brown and crispy.
- Remove and drain excess oil on a paper towel.
Step 4: Serve and Enjoy
Serve warm as a festive sweet or as a delicious treat with ghee for added flavor!
