Gujiya
Gujiya is a traditional Indian sweet pastry, commonly prepared during festivals like Holi and Diwali. It is a deep-fried, crescent-shaped dumpling filled with a mixture of khoya (mawa), dry fruits, and sugar. The crispy outer shell and the rich, sweet filling make it a popular festive delicacy.
Ingredients
For the Dough:
- 2 cups all-purpose flour (maida)
- 4 tablespoons ghee (clarified butter)
- Water (as needed)
- A pinch of salt
For the Filling:
- 1 cup khoya (mawa), crumbled
- ½ cup powdered sugar
- 2 tablespoons desiccated coconut
- ¼ cup chopped dry fruits (almonds, cashews, pistachios)
- 1 teaspoon cardamom powder
- 1 tablespoon raisins
For Frying:
- Oil or ghee
How to Make Gujiya
Step 1: Prepare the Dough
- In a mixing bowl, combine flour, salt, and ghee. Mix until it forms a crumbly texture.
- Add water gradually and knead into a firm dough. Cover with a damp cloth and let it rest for 30 minutes.
Step 2: Make the Filling
- Heat a pan and dry roast the crumbled khoya until it turns light golden. Let it cool.
- Add powdered sugar, desiccated coconut, chopped dry fruits, raisins, and cardamom powder. Mix well.
Step 3: Assemble the Gujiya
- Divide the dough into small portions and roll each into a small circle.
- Place a spoonful of filling in the center.
- Fold the dough over to form a half-moon shape. Seal the edges by pressing with fingers or using a fork.
Step 4: Fry the Gujiya
- Heat oil or ghee in a deep pan over medium heat.
- Fry the gujiyas in batches until golden brown and crispy.
- Remove and drain excess oil on a paper towel.
Step 5: Serve and Enjoy
Once cooled, store in an airtight container or serve immediately. Enjoy with tea or festive drinks!
