Gujiya

Gujiya is a traditional Indian sweet pastry, commonly prepared during festivals like Holi and Diwali. It is a deep-fried, crescent-shaped dumpling filled with a mixture of khoya (mawa), dry fruits, and sugar. The crispy outer shell and the rich, sweet filling make it a popular festive delicacy.


Ingredients

For the Dough:

  • 2 cups all-purpose flour (maida)
  • 4 tablespoons ghee (clarified butter)
  • Water (as needed)
  • A pinch of salt

For the Filling:

  • 1 cup khoya (mawa), crumbled
  • ½ cup powdered sugar
  • 2 tablespoons desiccated coconut
  • ¼ cup chopped dry fruits (almonds, cashews, pistachios)
  • 1 teaspoon cardamom powder
  • 1 tablespoon raisins

For Frying:

  • Oil or ghee

How to Make Gujiya

Step 1: Prepare the Dough

  1. In a mixing bowl, combine flour, salt, and ghee. Mix until it forms a crumbly texture.
  2. Add water gradually and knead into a firm dough. Cover with a damp cloth and let it rest for 30 minutes.

Step 2: Make the Filling

  1. Heat a pan and dry roast the crumbled khoya until it turns light golden. Let it cool.
  2. Add powdered sugar, desiccated coconut, chopped dry fruits, raisins, and cardamom powder. Mix well.

Step 3: Assemble the Gujiya

  1. Divide the dough into small portions and roll each into a small circle.
  2. Place a spoonful of filling in the center.
  3. Fold the dough over to form a half-moon shape. Seal the edges by pressing with fingers or using a fork.

Step 4: Fry the Gujiya

  1. Heat oil or ghee in a deep pan over medium heat.
  2. Fry the gujiyas in batches until golden brown and crispy.
  3. Remove and drain excess oil on a paper towel.

Step 5: Serve and Enjoy

Once cooled, store in an airtight container or serve immediately. Enjoy with tea or festive drinks!
