Mediterranean Chicken Stew is a flavorful and aromatic dish that combines tender chicken with fresh vegetables and a blend of spices. Slow-cooked with green olives, baby carrots, and raw papaya, this stew develops a rich taste and a unique texture. Ingredients

  • Chicken – 10-12 pieces (drumsticks and thighs), about 1 kg (with skin for better texture)
  • Green olives – 25-30 (preferably pitted for ease)
  • Raw papaya – Peeled and cut into medium-thin strips (10-12 pieces)
  • Baby carrots – 10-12 whole, peeled (or regular carrots cut into medium-long pieces)
  • White wine – ¾ cup
  • Coriander powder – 1 tbsp
  • Ginger-garlic paste – 1 tbsp
  • Green chili paste – ½ tsp (adjust as per spice preference)
  • Black pepper powder – ½ tsp (adjust as per taste)
  • Lemon juice – 2 tbsp
  • Salt – As per taste
  • Sugar – ½ tsp
  • Cinnamon – 1-inch stick
  • White onion – 2 medium, thinly sliced
  • Sunflower/vegetable/olive oil – 3 tbsp

Instructions

  1. Marination:

    • In a large mixing bowl, combine all ingredients except cinnamon, onions, and 1 tbsp oil.
    • Mix well, cover, and refrigerate for 12 hours to allow the flavors to infuse.
  2. Preparation Before Cooking:

    • Take the marinated mixture out of the refrigerator 1 hour before cooking and let it come to room temperature.
    • Stir once to ensure even marination.
  3. Cooking Process:

    • Heat oil in a non-stick pan over medium heat.
    • Add cinnamon and sliced onions, sautéing until they soften (be careful not to burn them).
    • Add the marinated chicken and vegetable mixture, cooking on medium heat for 10 minutes, stirring occasionally.
    • Reduce the heat to low, cover the pan, and let it simmer for about 20 minutes until the chicken and vegetables are fully cooked. There is no need to add extra water.
    • Stir occasionally to prevent sticking.
  4. Finishing Touches:

    • The stew should have a thick consistency with minimal gravy.
    • Adjust the seasoning with a little more lemon juice and black pepper if needed.
