This Gondhoraj & Coconut Shrimp-Stuffed Bhetki is an exquisite Bengali delicacy that beautifully combines the fragrant citrusy notes of Gondhoraj lemon with the rich flavors of shrimp and coconut. Wrapped in banana leaves and baked to perfection, this dish offers a delightful aroma and a melt-in-the-mouth texture. Ingredients
For the Fish:
- 1 whole Bhetki fish (approx. 1 kg)
- 1 banana leaf (cut into two pieces)
For Marination:
- 3 tbsp Gondhoraj lemon juice
- 3 tbsp oil
- Salt (as needed)
For the Stuffing:
- 300g small shrimp (with shells)
- 4 tbsp grated coconut
- ½ tsp Gondhoraj lemon zest
- 1 tbsp Gondhoraj lemon juice
- 1 tsp green chili paste
- 1 tsp ginger paste
- 2 tbsp black mustard seed paste
- 1 tbsp poppy seed paste
- ½ tsp turmeric powder
- Salt (as needed)
Process
- Prepare the Fish: Scale and clean the Bhetki fish thoroughly. Carefully remove the central bone, ensuring the fish remains intact. Pat it dry with a paper towel.
- Marination: Rub the fish with Gondhoraj lemon juice, oil, and salt. Let it marinate for 30 minutes.
- Prepare the Stuffing: Mix all the stuffing ingredients in a bowl, ensuring an even blend of flavors.
- Stuff the Fish: Fill the cleaned fish cavity with the prepared shrimp and coconut mixture.
- Preheat the Oven: Set the oven to 200°C (392°F).
- Wrap in Banana Leaf: Lightly heat the banana leaf over an open flame to make it pliable. Wrap the stuffed fish securely in the leaf.
- Bake: Place the wrapped fish on a baking tray and bake for 15–20 minutes.
- Final Touch: Carefully unwrap the top of the banana leaf and move the fish to the top rack of the oven. Bake for another 5 minutes until a golden hue develops.
- Serve: Once done, remove from the oven and serve hot with steamed rice.
