Tacos Gobernador - A Mexican dish
Introduction:
Tacos Gobernador (Governor’s Tacos) are a beloved specialty from the Mexican state of Sinaloa, particularly the coastal city of Mazatlán. These tacos were reportedly created in honor of a visiting governor, combining seafood richness with melty cheese and a touch of heat. With their juicy shrimp filling, sautéed vegetables, and crispy-fried tortilla base, they offer a perfect balance of flavor, texture, and aroma—making them one of Mexico’s most iconic modern taco creations.
Ingredients (Serves 4):
For the filling:
- 500g (1 lb) medium shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 tablespoon butter
- ½ white onion, finely chopped
- 1 garlic clove, minced
- 1 poblano pepper, roasted, peeled, and sliced (or substitute green bell pepper)
- 1 tomato, finely chopped
- Salt and pepper, to taste
- ¼ teaspoon smoked paprika (optional)
- 1 tablespoon chipotle in adobo sauce (optional, for smoky heat)
- 1 tablespoon chopped cilantro (optional)
For assembly:
- 8 corn tortillas
- 1½ to 2 cups shredded Oaxaca cheese (or mozzarella/Monterey Jack)
- Oil or butter for frying
How to Prepare:

Cook the shrimp filling:
- Heat olive oil and butter in a skillet over medium heat.
- Add the chopped onion and cook until soft and translucent.
- Stir in the garlic and cook for 30 seconds more.
- Add the poblano pepper and tomato. Cook for about 5 minutes until the tomato softens.
- Stir in the shrimp and season with salt, pepper, and paprika. Add chipotle if using.
- Cook until the shrimp turn pink and are just done—about 3–4 minutes.
- Sprinkle chopped cilantro and remove from heat.

Assemble the tacos:
- Heat a tortilla on a skillet or comal.
- Sprinkle a generous amount of shredded cheese over one half of the tortilla.
- Add a few spoonfuls of the shrimp mixture over the cheese.
- Fold the tortilla in half like a quesadilla.
- Cook on both sides until golden brown and the cheese is melted.

- Serve immediately with lime wedges, avocado slices, or your favorite salsa.
