Cuisine : Paneer Dilkhush (Delightful Cottage Cheese Curry)- How to make

Introduction:
Paneer Dilkhush is a creamy, luxurious North Indian dish that lives up to its name—“Dilkhush”, meaning "heart-pleasing" or "delightful." It combines soft cubes of paneer with a rich tomato-cashew gravy, flavored with aromatic kasuri methi and a touch of Indian spices. Finished with a swirl of fresh cream and a garnish of coriander, this dish is a festive favorite and pairs beautifully with Indian breads or rice.

Ingredients:

  • Paneer (cottage cheese) – 250 grams
  • Tomato purée – 200 grams
  • Fresh cream – 200 grams
  • Kasuri methi (dried fenugreek leaves) – 2 teaspoons
  • Ghee – as needed
  • Red chilli powder – ½ teaspoon
  • Turmeric powder – ½ teaspoon
  • Garam masala powder – ½ teaspoon
  • Green chillies – 2 to 3, slit
  • Cashew paste – 2 tablespoons
  • Salt – to taste
  • Fresh coriander leaves – for garnish

Method:

  1. Cut the paneer into bite-sized cubes.
  2. Heat some ghee in a pan and lightly fry the paneer pieces until golden. Remove and set aside.
  3. In the same pan, add a little more ghee and sauté the cashew paste until fragrant.
  4. Add tomato purée, green chillies, kasuri methi, salt, red chilli powder, and turmeric powder. Cook the mixture for a few minutes until the oil begins to separate.
  5. Add fresh cream and garam masala, stirring well to combine. Continue to cook until the gravy thickens and releases ghee.
  6. Add the fried paneer cubes to the gravy, mix gently, cover, and let it simmer for a few minutes.
  7. Garnish with chopped coriander leaves and serve hot.

Serving Suggestion:
Enjoy Paneer Dilkhush with naan, butter roti, or jeera rice for a truly satisfying meal.
