Tamal Asado

Introduction:
Tamal Asado is a traditional dish from Costa Rica, known for its comforting flavor and cultural significance. The word “tamal” refers to the popular Latin American dish made from corn dough (masa) filled with various ingredients and wrapped in plantain or banana leaves before being steamed. The term “asado” means “roasted” or “baked,” which reflects the unique twist of this version — instead of being steamed, the tamal is baked, giving it a firmer texture and a slightly roasted flavor. Tamal Asado is often enjoyed during special occasions, family gatherings, and festive celebrations such as Christmas in Costa Rica.


Ingredients:
(for approximately 6–8 servings)

  • 2 cups of corn flour (masa harina or ground cooked corn)
  • 1 cup of grated cheese (fresh white cheese preferred)
  • 1 cup of sour cream
  • 1 cup of milk or coconut milk
  • ½ cup of sugar (can adjust to taste)
  • ½ cup of butter or margarine (melted)
  • 3 eggs
  • 1 teaspoon of baking powder
  • ½ teaspoon of salt
  • Optional: ½ cup of grated coconut or raisins (for a sweeter version)

Preparation Method:

  1. Preheat Oven:
    Set the oven to 180°C (350°F) and grease a baking dish or line it with banana leaves for a traditional touch.

  2. Prepare the Batter:
    In a large bowl, mix the melted butter, sugar, eggs, and sour cream until smooth. Add the grated cheese and milk, stirring until well combined.

  3. Add Dry Ingredients:
    Gradually add the corn flour, baking powder, and salt to the wet mixture. Stir well to form a smooth, thick batter without lumps. You can adjust the consistency by adding a little more milk if necessary.

  4. Flavor Enhancement (Optional):
    For added sweetness and texture, mix in grated coconut or raisins.

  5. Bake:
    Pour the mixture into the prepared baking dish. Bake for about 45–60 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

  6. Cool and Serve:
    Let it cool slightly before cutting into slices. Serve warm with coffee or as a snack.


Serving Suggestion:
Tamal Asado is often enjoyed as a breakfast item or afternoon treat, paired with café chorreado (Costa Rican filtered coffee). It can be eaten plain or topped with a drizzle of honey or cream for extra richness.
