Cuisine: Manisha kabab - Steps to prepare this Turkish item

 



Winter is the season of vegetables, and among them, cauliflower enjoys a special level of popularity & used to make various dishes .One such dish  Bohça Kebab, also known as Manisa Kebab, named after the Manisa region of Turkey where this delicacy originated. Let us go through the process of how it is made 


Ingredients


For the kebab filling:

1 small cauliflower (finely chopped)

3 tablespoons chopped onion

3 cloves minced garlic

1 tomato (chopped)

3 green chilies (chopped)

1 cup minced chicken

½ teaspoon black pepper powder

2 tablespoons tomato sauce

1 tablespoon soy sauce

Salt to taste


2 tablespoons cooking oil

For the crepe batter:

1 cup liquid milk

2 tablespoons powdered milk

2 eggs

1 cup water

1 cup all-purpose flour

Salt to taste

A pinch of food coloring (optional)

For white sauce:

2 cups liquid milk

2 tablespoons all-purpose flour

1 tablespoon butter

1 tablespoon powdered milk

3–4 teaspoons black pepper powder

A pinch of salt


Additional toppings:

1 cup grated mozzarella cheese

1 teaspoon chili flakes



Instructions


Step 1: Prepare the crepe batter


Mix eggs, milk, water, flour, and salt thoroughly to form a smooth and thin batter. The consistency should resemble the batter for patishapta (a type of thin pancake). Cover the batter and let it rest for 30 minutes.


Step 2: Make the filling


While the batter rests, prepare the filling. Chop the cauliflower, tomato, and capsicum into small pieces. Heat a pan, add oil, and sauté the chopped onion and garlic for 2–3 minutes. Add the minced chicken, cauliflower, capsicum, green chilies, black pepper, and salt. Cover and cook over medium heat for 10 minutes. Finally, add tomato sauce and soy sauce, stir well, and set the filling aside.


Step 3: Prepare the crepes


Heat a non-stick pan and lightly brush it with oil. Pour two tablespoons of the batter into the pan to make thin, soft crepes. Cook each crepe for a few minutes and set aside.


Step 4: Assemble the kebabs


Place a portion of the prepared filling in the center of each crepe and fold the sides over to form a neat, round parcel. Repeat with the remaining crepes. Arrange the stuffed crepes in an ovenproof dish lightly greased with oil.


Step 5: Make the white sauce


Melt butter in a pan and sauté the flour briefly. Gradually add milk while stirring constantly to avoid lumps. Add salt and black pepper powder. Cook until the sauce is smooth and reaches a medium-thick consistency. Remove from heat.


Step 6: Bake the kebabs


Pour the white sauce over the stuffed crepes. Sprinkle grated mozzarella cheese and chili flakes on top. Bake in a preheated oven at 200°C until the cheese melts and turns slightly golden.


Step 7: Serve


Serve these delicious Bohça Kebabs hot and enjoy the rich flavors of this Turkish delight.
