Shan noodles are a popular dish in Myanmar, especially among the Shan ethnic group. Here's a detailed recipe to prepare them:


Ingredients:


For the noodles:

- 250g Shan noodles or any flat rice noodles

- Water for boiling

- Salt


For the broth:

- 4 cups chicken or vegetable broth

- 2 cloves garlic, minced

- 1-inch piece ginger, minced

- 2 shallots, minced

- 2 tablespoons vegetable oil

- 2 tablespoons fish sauce

- 1 tablespoon soy sauce

- 1 tablespoon oyster sauce

- Salt and pepper to taste


For the toppings:

- 200g chicken breast or thigh, thinly sliced

- 2 tablespoons vegetable oil

- 2 cloves garlic, minced

- 1 teaspoon turmeric powder

- 1 teaspoon paprika powder

- 2 cups mixed vegetables (such as carrots, cabbage, and bok choy), thinly sliced

- Fresh cilantro leaves

- Fried garlic slices

- Lime wedges

- Chili flakes or fresh chili (optional)


Instructions:


1. **Prepare the Noodles:** Cook the Shan noodles or flat rice noodles according to package instructions in boiling salted water. Drain and set aside.


2. **Make the Broth:** In a large pot, heat the vegetable oil over medium heat. Add the minced garlic, ginger, and shallots. Sauté until fragrant, about 1-2 minutes.


3. **Add Broth Ingredients:** Pour in the chicken or vegetable broth. Add fish sauce, soy sauce, and oyster sauce. Season with salt and pepper to taste. Bring to a simmer and let it cook for about 10-15 minutes.


4. **Prepare the Toppings:** In a separate pan, heat vegetable oil over medium-high heat. Add minced garlic and cook until golden brown. Add sliced chicken and cook until it's no longer pink. Sprinkle turmeric powder and paprika powder over the chicken and stir to coat evenly. Add the mixed vegetables and cook until they are tender-crisp.


5. **Assemble the Noodles:** Divide the cooked noodles into serving bowls. Ladle the hot broth over the noodles.


6. **Add Toppings:** Top the noodles with the cooked chicken and vegetable mixture.


7. **Garnish:** Garnish with fresh cilantro leaves, fried garlic slices, and lime wedges. Sprinkle chili flakes or add fresh chili if desired.


8. **Serve:** Serve hot and enjoy your delicious Shan noodles!
