- Chicken or pork (sliced or minced)

- Onions (sliced)

- Garlic (minced)

- Ginger (minced)

- Cooking oil

- Fish sauce

- Soy sauce

- Chicken or pork broth

- Chickpea flour (roasted)

- Dried red chili flakes

- Hard-boiled eggs (sliced)

- Coriander leaves (chopped)

- Lime or lemon wedges

### Instructions:

1. **Prepare the Noodles:**

   - Soak the thin rice noodles (vermicelli) in warm water until they become soft, then drain and set aside.

2. **Prepare the Meat:**

   - In a pan, heat some cooking oil and add sliced onions, minced garlic, and minced ginger. Sauté until fragrant.

   - Add sliced or minced chicken or pork to the pan and cook until browned and cooked through.

3. **Prepare the Broth:**

   - In a separate pot, heat chicken or pork broth until it simmers. Season with fish sauce and soy sauce to taste.

4. **Prepare the Chickpea Flour Sauce:**

   - In a small saucepan, heat some cooking oil and add roasted chickpea flour. Stir continuously over low heat until the flour turns golden brown and gives off a nutty aroma.

   - Add water gradually while stirring to create a smooth sauce consistency. Season with salt to taste.

5. **Assemble the Dish:**

   - In individual serving bowls, place a portion of the softened rice noodles.

   - Top the noodles with the cooked meat mixture.

   - Ladle hot broth over the noodles and meat, ensuring it covers the ingredients.

   - Drizzle the chickpea flour sauce over the top of the dish.

   - Garnish with dried red chili flakes, sliced hard-boiled eggs, chopped coriander leaves, and lime or lemon wedges.

6. **Serve:**

   - Mandalay mee shay is typically served hot. It can be enjoyed as a standalone dish or accompanied by additional condiments like chili oil or pickled vegetables.
