Cuisine : Panta Bhat with Shutki - How to make this traditional Bangladeshi dish

 

"Panta bhat" is a traditional Bangladeshi dish made from leftover cooked rice soaked in water overnight, and "shutki" refers to dried fish. Here's how you can prepare "Panta bhat with shutki":


Ingredients:

- Leftover cooked rice (preferably from the previous day)

- Dried fish (shutki), such as Bombay Duck (loitta) or dried shrimp (chingri)

- Water

- Salt

- Green chilies (optional)

- Onion (optional)

- Mustard oil (optional)


Instructions:

1. Begin by washing the dried fish thoroughly to remove any dirt or impurities. If using Bombay Duck, remove the head and tail and clean the fish properly.


2. Soak the cleaned dried fish in water for about 30 minutes to soften it slightly.


3. In a separate bowl, place the leftover cooked rice and pour enough water to submerge the rice completely. Allow the rice to soak in the water overnight or for at least 6-8 hours. This process will soften the rice and allow it to ferment slightly, enhancing its flavor.


4. After soaking, drain the excess water from the rice. The rice should be soft and slightly sour in taste due to fermentation.


5. Now, prepare the dried fish. If using Bombay Duck, you can lightly fry it in oil until it becomes crispy. If using dried shrimp, you can simply roast them in a pan without oil until they become aromatic.


6. Once the dried fish is prepared, mix it with the soaked rice in a large bowl.


7. Add salt to taste and mix well. You can also add finely chopped green chilies and onions for extra flavor, if desired.


8. Serve the Panta bhat with shutki immediately, drizzling some mustard oil on top for added flavor, if desired.


9. Enjoy your traditional Bangladeshi dish!


Note: Panta bhat with shutki is often enjoyed as a refreshing summer dish, as the fermented rice helps cool the body in hot weather. Adjust the amount of water and salt according to your taste preferences.
