Mechoui is a traditional North African dish, especially popular in countries like Morocco and Algeria, where it’s often served at festive occasions, weddings, and family gatherings. The term "mechoui" translates to "grilled" or "roasted," referring to a whole lamb that is slowly roasted until the meat becomes tender and the skin crispy. Prepared with minimal ingredients to let the lamb's natural flavors shine, mechoui is often cooked over a wood fire or in a clay oven, lending a smoky, earthy flavor. This communal dish is usually enjoyed by tearing pieces of lamb by hand, making it both a feast and a social experience.

5. Butter or olive oil

Preparation


1. Prepare the Lamb: Rinse and pat dry the lamb. Generously rub the inside and outside with salt, pepper, and cumin, creating a simple but flavorful crust. Some variations use garlic, coriander, or paprika for added complexity.


2. Add Butter or Oil: Rub butter or olive oil over the surface to keep the meat moist and enhance the browning process, especially for lamb prepared in an oven.


3. Roasting the Lamb:

Over Fire (Traditional Method): Traditionally, the lamb is skewered and roasted over a wood fire or placed in a large clay oven. The lamb is slowly rotated for even cooking, with the heat gradually rendering the meat tender and infusing it with a mild smokiness.


In an Oven: Place the lamb on a roasting rack, cover with foil, and cook at a low temperature for several hours. The lamb should be basted periodically to maintain moisture, with the foil removed toward the end for crisping.


4. Serve: Once fully cooked, the lamb is placed on a communal platter. Traditionally, it is served with a side of ground cumin and salt for additional seasoning. To eat, pieces of meat are torn off by hand, often paired with warm bread.
