Soak the grains: Begin by soaking the cracked wheat or barley for a few hours to soften it.


Cook the meat and spices: In a large pot, heat olive oil, then add the meat, onions, and garlic. Add the spices and cook until the meat is browned and aromatic.


Add vegetables and chickpeas: Add chopped vegetables and chickpeas to the pot, followed by enough water to cover everything. Simmer until the vegetables are tender.


Add the grains: Drain the soaked grains and add them to the pot. Stir and allow the dish to cook until the grains are soft and have absorbed the flavors.


Simmer and adjust seasoning: Let the Cherchem cook over low heat, stirring occasionally, until it reaches the desired consistency. Adjust the seasoning as needed.


Cherchem is best served hot, often with bread or on its own, allowing the rich flavors and textures to shine.
