Cuisine : Cherchem - How to make this traditional Moroccan dish

Cherchem is a traditional Moroccan dish, especially popular during specific celebrations or gatherings. It's known for its hearty and flavorful ingredients, making it a comforting dish with a blend of unique spices.

Cherchem, sometimes referred to as "Moroccan wheat stew," is commonly made with cracked wheat or barley, mixed with a variety of vegetables, chickpeas, and meats such as lamb or beef. The dish is seasoned with aromatic spices, which include cumin, turmeric, cinnamon, ginger, and coriander. These spices give Cherchem its distinctive flavor profile, a combination of warmth, earthiness, and a slight sweetness from the cinnamon. The meal is nourishing and filling, providing a balance of proteins, fiber, and vitamins.

Traditionally, Cherchem is enjoyed by families gathered around a large communal dish, emphasizing the importance of community and shared meals in Moroccan culture.

How Cherchem is Prepared

1. Ingredients:

Cracked wheat or barley

Meat (typically lamb or beef)

Chickpeas

Carrots, potatoes, zucchini, or other vegetables

Onions, garlic

Moroccan spices (cumin, turmeric, cinnamon, ginger, coriander)

Salt, pepper, and olive oil

2. Preparation Steps:

Soak the grains: Begin by soaking the cracked wheat or barley for a few hours to soften it.

Cook the meat and spices: In a large pot, heat olive oil, then add the meat, onions, and garlic. Add the spices and cook until the meat is browned and aromatic.

Add vegetables and chickpeas: Add chopped vegetables and chickpeas to the pot, followed by enough water to cover everything. Simmer until the vegetables are tender.

Add the grains: Drain the soaked grains and add them to the pot. Stir and allow the dish to cook until the grains are soft and have absorbed the flavors.

Simmer and adjust seasoning: Let the Cherchem cook over low heat, stirring occasionally, until it reaches the desired consistency. Adjust the seasoning as needed.

Cherchem is best served hot, often with bread or on its own, allowing the rich flavors and textures to shine.
